EASY Roasted chicken salad

After my Raw Vegan Cleanse I wanted to start off slow back into carnivore-land.

I thought a chicken salad would be good.  I missed cheese in my diet so i deiced to make a Caesar salad with some roasted chicken.

Got some ciabatta for croutons, skin on chicken thighs, fresh rosemary and prosciutto.   Threw it all together, placed the chicken on top of the bread while baking so that the juices would get sucked into the bread.  toasted them up in a super hot oven and done.  simple delicious easy.  Browned some taters and onions in beef fat (left over from the beef cheek confit).

Day 5: I am the master of my domain!

So Day 5 was hard, I had casting calls and it was a beautiful day out.

I caved under pressure.   I’m not sure why I decide to do this cleanse but the results are in.  Veggies & fruit are awesome but it’s just not me if thats the only thing i’m eating.  I have a new love for great fresh local produce but i also love locally raised pigs and a 500 degree oven.   So i wouldnt call this “7 day cleanse” a failure but more of an awakening of my tastebuds to new and untraveled roads on the culinary road map. (ie. i love grapefruits now)

My first meal of day 5 consisted of vegan black hummus with roasted bell peppers, avocados, cucumbers on organic wholewheat bread.  I felt like if i was going to break my fast prematurely atleast i should still keep it meatless.

Later that night I had 3 bottles of wine at my favorite wine bar in NYC ‘inoteca.  Had some antipasti and then went on to smoke some hookah.  On the way home I no longer cared about any of this and had a slice of pizza and a Jamaican beef patty which was EXCELLENT.

Confit wagyu beef cheeks

I was at the neighborhood Wagyu only beef market and decided to get some beef cheeks. I know how delicious these can be when prepared well but when I told my friends they all had a face of disgust and asked why I would do such a thing. To make it even worst I told them I would confit them. After a look of confusion I said I’m gonna slow cook them in fat. Again, “Why?”

To which I say why not?

I scurried the Internet for some inspiration on seasonings an methods. I ended up adapting and tweaking a recipe that I’ll post up once I’m around a computer. (updating via iPhone now) after seasoning an dry aging the cheeks for 3 days I sunk them into a bath of olive oil and Wagyu fat for about 6 hours. That must have been the hardest part. After it was off the stove it was placed first in the fridge and then freezer since I wasn’t ready for them yet.

Days later I pop them out of the fat and make a sauce with some of the beef juice. Caramelize some shallots an celery with the fat. Sear the cheeks in a hot pan and presto. It was hard to slice without it falling apart but it was delicious.

Santa Barbara Jan ’11

Spent the past few weeks in beautiful Southern California, one of the many stops I made was in Santa Barbara,  Well more so the Santa Ynez and Los Alamos area.   Firestone, Lincourt, Foley.   What a great bunch of vineyards all under the watchful eye of Bill Foley.

Kobe Bangers & Curry Mash

This isnt your ordinary bangers and mash.  Honestly, I’ve never the combo because every time i did the potatoes were dry, or the sausage was over cooked.

So…. another layer of snow has fallen, i woke up starving and i thought to myself, “i have some thawing sausages but i dont want to cover it up in any sauce… BANGERS AND MASH”

But I had no potatoes, only one large sweet potato.  I wanted this to be savory so I looked around and ended up tossing in a bunch of random stuff.  Here it goes..

(again, i didn’t really measure anything just guesstimating)

Kobe Bangers & Curry Mash
Serves 3

Curry Mash
1 Large Sweet potato
1 Green scallion
1 Shallot
1 tsp massaman curry paste
1/2 tsp dried red pepper flakes
1/2 tsp dried oregano
1/4 cup of grated Parmesan
1/4 cup of grated Aged Gouda
3 slivers of semi sundried tomatoes
1 cup Milk
1/2 stick of butter

No science here, just peel and cut up the sweet potato, boil it in salted water.  drain it out and return to heat.  On a low flame, toss in milk and butter and wait for it to heat up again.  Then throw in everything else beside the cheese, and start mashing it all up.  I used an immersion stick blender, but you can use whatever method you want.  Once its all blended up, toss in the cheese and then season with salt and pepper to taste.

Kobe Sausage
1/2 lb of kobe / wagyu sausage
1/2 medium onion
1 cup of beef stock

Heat up a pan with a little butter and olive oil. Toss in the sausage and let it brown and cook, then remove and throw in the onions and a little more olive oil if needed.  Remove onions when browned and then add the stock and let scrape up all the bits of flavor stuck on the pan.  and then set aside and off the fire.

Then just plate the shit up and shove it in yo mouth!

Yes.. i did lick my plate clean.
